The fourth Steak and Wine Pairing event held at Chateau Cellars, featuring Chef Viet Vo’s delectable Cast Iron Ribeye with Blue Cheese Sauce, was a resounding success.
The dish was expertly paired with a glass of IL Marroneto Brunello di Montalcino DOCG 2017, a wine that exhibited juicy and plump characteristics with distinct red fruit notes, particularly strawberry, cranberry, and raspberry.
The wine demonstrated a harmonious balance and brightness, complemented by a lingering finish of leather, earthy, and pepper undertones. While the wine was enjoyable on its own, it formed an exceptional pairing with the steak, as its bold and medium to full-bodied structure complemented the robust flavors of the sauce, while its red fruit notes provided a refreshing contrast to the richness of the dish.
The pairing achieved a harmonious balance, allowing each element to enhance the other without overpowering it. Alternative wine options such as Bordeaux, Borolo, and Cabernet Sauvignon would also be suitable accompaniments to this steak preparation.
