The 2nd Steak and Wine Pairing at Chateau Cellars was an Herb Crusted Skirt Steak with Chimichurri Sauce. To me, this is a great summer steak.
It is meltingly tender, and topped with herbaceous goodness. Yum!
I especially loved the garlic, bright acidity and herbal freshness in the Chimichurri sauce that Chef Viet served.
The skirt steak is a less expensive cut, easily accessible and cooks quickly. This summer delight was paired with the Comando G’ Rozas Premier-Primer Cru Spain 2020. As you know from the first tasting, the Barolo was my favorite of the night and could easily pair with any one of the steak preparations.
While a classic Malbec would be where I would typically go for an Argentinean sauce like Chimichurri we rather enjoyed a Spanish Red made with Garnacha with a Burgundy like style. Garnacha is red fruit forward that creeps over to the sweet line without fully engaging in sweetness.
This particular varietal had an earthy, leathery, minerally, funky flavor profile. The structure, earthiness, taste of cherry and mineral undertones, along with a long finish made this wine great for sipping on its own or a suitable match, to stand up to the steak.
I rated this wine a 4.2 out of 5, or 92 points.
