This evening’s meal and wine pairing were primarily driven by my personal preferences rather than a focus on complementing flavors and enhancing the overall dining experience. Sometimes you want what you want and that is OK!
I prepared a gluten-free and dairy-free Italian chicken dish with cherry tomatoes and spinach, served over gluten-free orzo pasta. I paired this meal with a lovely yet complex Bordeaux wine. I was curious to try this particular Bordeaux because of its reasonable price. I am always looking for excellent wines that are available for under $40, so I can have them on hand to enjoy.
Tonight’s wine review:
2020 Chateau Tour Saint Christophe Saint-Emillion Grand Cru
Grapes: 80% Merlot, 20% Cabernet Franc
Tasting notes: Vanilla, blackberry, black raspberry, dark cherry, tobacco, chocolate, leather and earth
Characteristics: It has robust and intense flavors and a smooth and velvety texture. Despite its youth, a three-hour decanting process allowed it to express its full potential. With further aging, I would expect it to develop even greater complexity and depth.
